SUBSTANCE: invention relates to production of concentrated pomegranate juice. A method of cryoconcentration of pomegranate juice has been proposed, within the said method freezing is carried out in a capacitive-type cryoconcentrator, and cryoconcentration is carried out in 2 stages: in the first stage, the original pomegranate juice with a dry matter content of 17.2% is subjected to freezing at a heat exchange surface temperature of minus 4.5°C until the degree of freezing reaches 40% of the mass of the original solution, the ice is melted and removed from the cryoconcentrator, the resulting concentrate with a dry matter content of 22.8% is sent to the second stage, where freezing is carried out at a heat exchange surface temperature of minus 6°C until the degree of freezing reaches 43% of the mass of the original solution, the ice is melted and removed from the cryoconcentrator and a concentrate with a dry matter content of 30.5% is obtained, while the ice formed at both stages after melting is mixed and sent to a parallel freezing stage at a temperature heat exchange surface minus 4°C until the freezing degree reaches 44% by weight of the original solution, the resulting concentrate with a dry matter content of 17.2% is sent back to the first freezing stage.

EFFECT: invention ensures a reduction in the loss of dry substances in the resulting ice to 2.3% while increasing the concentration of dry substances in pomegranate juice by 1.8 times.
