FIELD: food industry.

SUBSTANCE: one proposes a method for production of a cooked semi-product involving preparation of a scalded dough of prime grade wheat flour, pectin-containing powder from refuses of small-fruited apples, butter, water and salt. A mixture of wheat flour and pectin-containing powder from refuses of small-fruited apples is gradually added to the cooking pot while boiling water, oil and salt, and the mixture is stirred until a homogeneous mass is formed. Further, the scalded dough is cooled to 65–68 °C, then, melange is gradually added and mixed till homogeneous structure. Dough with temperature of 40±2 °C is formed by deposition method, then moulded workpieces are baked at temperature of 185–200 °C.

EFFECT: invention enables to obtain a cooked semi-product with a high content of biologically active substances, with an extended shelf life of the ready product.
