SUBSTANCE: invention relates to food industry, namely to bakery production. Dough composition for wheat bread production contains Pamyati Konovalov wheat whole-grain flour, pressed bakery yeast, food salt, vegetable oil, white sugar, sunflower seeds, maltodextrin and water at the following ratio of components, g: Pamyati Konovalov wheat whole-grain flour – 100.0, food salt – 1.5, pressed bakery yeast – 2.0, white sugar – 2.0, vegetable oil – 2.0, sunflower seeds – 4.0, maltodextrin – 5.0 and water – calculated amount to moisture content of 46-47%.
EFFECT: invention allows to expand the range of functional bakery products with improved antioxidant properties, to obtain bread with improved quality indices and increased freshness period of bread preservation.
