FIELD: agriculture.
SUBSTANCE: invention relates to agriculture, specifically to methods for monitoring and controlling the drying processes of food products in devices using the convective drying method and other types of dryers, and can be used in food, chemical and related industries. Method for assessing and controlling the process of convective drying of vegetables and fruits includes measuring the temperature and humidity of the drying agent before and after drying using sensors, information from which is transmitted to the microprocessor, which, according to the algorithm embedded therein, sets the task for the temperature mode of the drying agent at the inlet of the dryer, according to the invention, the drying process is divided into time intervals, the temperature of the drying agent and the duration of treatment are set depending on the material to be treated, sensors measure and record drying agent temperature and humidity for all time intervals of drying process, current value of atmospheric pressure is monitored and data on temperature and humidity of the drying agent at the inlet and outlet of the dryer are collected and stored, at that, for all time intervals, the drying agent temperature and humidity data from the sensors are transmitted to the microprocessor and inputting into it the drying material state function, the drying process constant rate characteristic function, the equilibrium hygroscopic state characteristic function, wherein for all time intervals the drying process state is assessed and controlled by normalized functions, an arbitrary drying time interval is set and subsequent time intervals are set, in one case drying process state is estimated by normalized function, in the other case, the drying process state is estimated by the normalized function, setting the criteria for the numerical values of the constant drying rate values and the equilibrium hygroscopic state of the drying process state evaluation, wherein different conditions represent the period of constant drying rate or the period of decreasing drying rate or reaching of required moisture content by drying material whereat material drying is terminated.
EFFECT: invention makes it possible to assess and control the convective drying process.
