FIELD: oil and butter production. SUBSTANCE: fat is treated with electrolyte solution simultaneously with activation on contacting surfaces at pressure (50-70)·105 Pa,. 1-3 % solution of sodium chloride or 0.5-1.5 % solution of sodium sulfate or 0.1-0.5 % solution of trisodium phosphate is used as mentioned above electrolyte, its quantity being 1-3 % of fat mass. EFFECT: improves quality of technical fat, decreases losses, decreases duration of technologic process. 8 tbl
