SUBSTANCE: method for diffusion juice purification includes steps of lime slaking to produce milk of lime; hydrodynamic cavitation activation of milk of lime; introduction of milk of lime into diffusion juice. After activation, sugar is introduced into milk of lime up to the dry substances content of 0.7-3.7%. EFFECT: increased efficiency of the process.
