FIELD: food industry. SUBSTANCE: method involves grinding of Jerusalem artichoke tubers, preparing of juice and juice hydrolysis for inuline and fructosate complex decomposition to fructose and glucose. Hydrolysate is mixed with lipid-protein concentrate obtained from soybean, sunflower and Amaranthus seeds. This concentrate is a liquid containing 21.5-24.5 DS and the following components per 100 g mixture: hydrolysate 60.0-71.3, and lipid-protein concentrate 28.5-40.0%, respectively.
