FIELD: food-processing industry. SUBSTANCE: method involves exposing to vacuum in paired zones positioned in succession, with value of absolute vacuum increasing in each parallel zone; creating vacuum in vacuum zones by providing flowing of product through nozzles; separating gas-liquid mixture into gaseous and liquid products. Apparatus has vacuum chamber formed by paired nozzles disposed on casing. Nozzles are communicated one with the other through vacuum pipelines. First nozzles in the direction of flowing of product are communicated one with the other through distributing device with product feeding branch pipe. Venturri branch pipe is mounted axially of nozzles. Perforated baffle plate is positioned in casing below nozzles. EFFECT: wider operational capabilities and high quality of product. 3 cl, 5 dwg
