FIELD: fish processing equipment. SUBSTANCE: device comprises vertically-installed loading tray for gravity loading of fish fillet from top down. This dispenses with the energy consumption for transportation of fillet. Air pressure in flexible shell of the hold-down drum and, consequently, force of pressing fish fillet to the tray are adjustable. A disc knife is simple in manufacture and operation. A fan simplifies the discharge of removed skin. EFFECT: absence of additional transfer links, smooth adjustment of fillet-to-tray pressing force, prompt refitting for a different kind of handled material, convenient operation, simple design, higher reliability and economy. 1 dwg
