SPARKLING WINE PRODUCTION METHOD Russian patent published in 1995 - IPC

FIELD: wine-making industry. SUBSTANCE: wine materials of Traminer, Aligote and Risling sorts are blended in ratio of 4 : 3 : 3 in amount of 10 % from volume of blending and wine materials of Takesadura, Godelio and Aliwarinio sorts - in ratio of 4 : 3 : 2 in amount of 90 % from volume of blending. According to well-known production process, from blending they prepare fermenting mixture and make it to brew under pressure of carbon dioxide. From wine material, used in blending, liqueur is prepared and keep for two months. After liqueur has been kept for one month, they introduce a component in it, that gives liqueur nutmeg taste and flavor. After fermentation wine is added with dose of expeditionary liqueur to required terms of sugar percent, it is cooled to temperature of minus 3 - 4 C, filtered and sent be bottled. EFFECT: sparkling wine production method is used in wine-making industry.
