FIELD: meat industry. SUBSTANCE: method involves crushing the feedstock, heat treating, degreasing and cooling. Heat treatment is carried out in a thin layer by conductive heating with concurrent direct injection of live steam into the mass at a temperature of 118-122 C and a pressure of 0.3-0.5 MPa for 10-14 min. Feedstock is crushed before heat treatment to a paste-like state with particle size of 2-5 microns. EFFECT: higher efficiency. 1 tbl
