SUBSTANCE: invention relates to consortium of the following yeasts and bacteria: Saccharomyces mandshuricus, Hauseniaspora sp., Torulopsis globosa, Torulopsis sp., Saccharomyces ludwigii, Saccharomyces lactis and Acetobacter xylinum, Acetobacter aceti, Gluconobacter subaxydans that produces complex of vitamins, organic acids, enzymes and cellulose. Consortium is deposited in VKPM (GNII-Genetics) at N B-7132. Method involves the use of the proposed yeast consortium and bacteria VKPM B-732 for preparing weakalcoholic drink by the parent raw mixture fermentation at 24-32 C for 4-5 days. The parent raw for fermentation involves carbohydrate-containing substrate and nitrogen component. Liquid phase is separated by filtration or centrifugation. The prepared drink has complex of enzymes, vitamins (mainly from the B-group), ascorbic, acetic, succinic, malic, benzoic, kojic and other acids. The remained solid solid fraction (cellulose microfibrills mainly) can be used as fibrous addition in bread baking and in pharmacy as wound-healing material.
