FIELD: processing of agricultural food products. SUBSTANCE: method involves preliminary forming the thin layer of liquid of 0.25-3 mm thickness. Treatment of layer is conducted by continuous infrared radiation with wave length equals to 1-5 mcm and flow density, to 3-10 W/sq.cm. EFFECT: higher efficiency.
