FIELD: production of spirits. SUBSTANCE: invention relates to technology of preparing cognac-type beverages in coated metal tanks with oak staves, in particular, to technology of accelerated ripening - aging of spirits. Method consists in that, into coated tanks, activated oak staves 10 mm thick are charged, alcohol poured in and then aged in contact with oak staves. According to invention, pressure in coated tank is periodically increased during aging by way of feeding compressed air through bubbling means into lower part of tank under oak staves. Once predetermined period of aging expired, pressure over alcohol is reduced to normal value. Excessive pressure of air is 2-5 atm and period of excessive pressure action is 24-48 h, while that of normal pressure is the same. Number of pressure-change cycles depends on excessive pressure value chosen, cycle duration, and organoleptic evaluation of sampled alcohol. EFFECT: accelerated process. 1 dwg
