FIELD: food industry.
SUBSTANCE: wood used for liquors production is exposed to ionising radiation until integral absorbed dose is 1-500 kHz. Then the wood is subjected to ultrasonic treatment at a 1-1000 kHz frequency during a period of up to 60 min with subsequent ripening of corresponding liquors in accordance with the classical technology.
EFFECT: quality liquors production acceleration.
