FIELD: measurement of composition of loose materials, specifically, loose foodstuffs. SUBSTANCE: method and device are meant for determination of composition of loose food-stuffs directly on production line where product is moved in front of measuring device. Optical measurements in near IR region are conducted and composition is found with allowance for calibration values. Product is transported in front of measuring device in the form of dense flow, measurements in near IR region are conducted in light reflected from product in the form of individual measurements over entire spectrum with time of each measurement less than 100 ms. Average value of individual measurements formed statistically is used for determination of composition of product. EFFECT: enhanced authenticity of method and efficiency of device. 13 cl, 10 dwg
