FIELD: food industry. SUBSTANCE: method involves preliminary preparation of apple-pectin mixture by pectin swelling in apple puree. Mixture is mixed with sugar and salt, heated and boiled down. Prepared mixture is mixed with egg white, syrup, food acid, essence and whipped under the pressure of compressed air. At the stage of mixing apple-pectin mixture with egg white and syrup, additionally introduced is powdery beet-milk or beet-syrup half-finished product in amount of 3.34-4.60% of mass part of sugar, and sugar is introduced in amount of 52.19-51.52% of mass. Powdery half-finished product is used as natural colorant. EFFECT: higher biological and nutrient value; broadened assortment of zephyr with pink color. 1 tbl
