FIELD: food industry.

SUBSTANCE: invention relates to food industry. Proposed is method for production of marshmallow, according to which agar-sugar-molasses syrup is prepared and dry egg white is restored. Then white sugar is mixed with pumpkin puree and concentrated orange juice, part of reconstituted egg white is added and beaten in a beating machine. Then one introduces the remaining egg white and continues beating. Agar-sugar-molasses syrup, lactic acid are added and mixed for uniform distribution of components. Finished whipped mass is formed by jigging in the form of figures with a corrugated surface, cooled, powdered with sugar powder and packed.

EFFECT: invention is aimed at development of a method for production of marshmallow, which enables to obtain functional purpose marshmallow.
