SUBSTANCE: method involves grinding the raw material with destalking; recovering the self-flowing fraction and pressing the drained pulp with receiving and fermenting the wort. Before fermentation, water enriched extractive substances of drained pulp, and ethyl alcohol are introduced in wort in amount: water up to 100% of volume of drained pump, and ethyl alcohol not less 10%. EFFECT: increased output of wine materials without reduction of their quantity. 1 tbl
