FIELD: food industry, more particularly recovery of pectin from vegetable stock. SUBSTANCE: pectin-containing vegetable stock is extracted to isolate liquid phase from spat, the liquid phase is treated successively with ammonia, carbon dioxide and peroxydase in ionizing radiation, and the desired product is thereafter recovered from liquid phase and heated during or after its recovery to temperature not lower than 60 C. EFFECT: more efficient recovery method.
