FIELD: food industry. SUBSTANCE: method involves hydrolysis-extraction of pectin-containing plant raw, separation of extract, precipitation of pectin from extract with acetone, separation of pectin, washed out with acetone and acetone removal from the end product by washing out with liquid carbon dioxide under pressure above atmospheric one followed by pressure drop to atmospheric one. EFFECT: improved method of production.
