SUBSTANCE: method involves predicting optimum slaughter time and young cattle preslaughter weight during animal's life-time on the basis of control tables worked out on the basis of staged control slaughters of young cattle of different kinds, sex and age and indicating conversion of protein and feed energy into meat product; determining edible protein yield, fat, protein and fat ratio on the basis of data of consumed crude protein and exchange energy for raising and fattening of animal and by means of related control table; considering readiness of young cattle for slaughter by determined protein and fat content and protein and fat ratio.
