FIELD: microbiological synthesis. SUBSTANCE: lactic acid is prepared by fermentation of mixture of granulated sugar and starch hydrolyzate at weight ratio from 60:40 to 40:60 in presence of malt germ treated with lactic acid. Level of titrated acidity is maintained from 0.7 to 1.0%. Average daily accumulation of calcium lactate is 2.0 to 2.2% and yield of lactic acid 86.4-88.5% relative to sugar added.
