FIELD: food industry. SUBSTANCE: roll comprises high-grade wheat flour, baker's yeast common salt, sugar, vegetable oil and water and also flour quality improving agent. Components are used in certain ratios. In preparing said roll, dough components are mixed in two steps. First step is carried out when operating unit rotates at slower rate than in second step. Vegetable oil is introduced into mixture of components 1 minute prior to completion of first mixing step.
