FIELD: food-processing industry. SUBSTANCE: method involves impregnating raw plant material with mycelium obtained by extracting biomass of Pythium insidiosum microorganisms with nonpolar liquefied gas, with total content of arachidonic and eicosapentic acid of 0.5-10 104 mg/t. Impregnation process is conducted at pressure above atmospheric pressure for 2-5 hours, with following reducing pressure to atmospheric pressure value at rate providing freezing of raw plant material. Method allows juice microbial mold resistance to be increased. EFFECT: increased efficiency and improved quality of product.
