FIELD: chemical industry. SUBSTANCE: method comprises unreactive hydrolysis of fats and oils followed by separation of fatty acids and glycerol water. Process comprises purification of glycerol water and evaporation thereof in vacuum and evaporator systems. Prior to feeding into vacuum-evaporator system, ionol is added to glycerol water in amount of 0.1-0.2% based on weight of glycerol water and quality of raw glycerol is thus improved.
