FIELD: technology of juice production. SUBSTANCE: method of preparing raw material for juice extraction involves its grinding and passing through mate electrodes. Before grinding, raw material is treated with lipid-containing extract of biomass of microorganisms Pythium catenulatum applied from an above-critical carrier in amount of 0.5-0,5-104 mg/t in terms on conversion to total content of arachidonic and eicosapentaenoic acids. Then raw material is aged for 3-8 h. EFFECT: reduced possibility of juice microbial spoilage. 2 ex
