FIELD: food-processing industry. SUBSTANCE: apparatus has rotating working tool made in the form of rubberized ellipsoid and fixed on rod in detachable washing-off chamber, device for centering working tool in vertical position and regulating gap between working tool and washing-off chamber, washing-off water supply and used water discharge system connected to supply and discharge branch pipes positioned in upper and lower parts of detachable washing-off chamber, respectively. Water supply system has elevated tank with constant water lever provided by discharge pipe, stepped water flow rate regulator, four-way valve for reversal of water supplied into chamber. Device for regulating gap between working tool and chamber bottom with rigidly fixed lower deck has threaded sleeve with guides and nut. Used water is discharged through auger with special sieve preventing gluten from discharge from chamber. Sieve is provided with sealing ring. Apparatus may be used in laboratories engaged in determining wheat grain and flour quality in grain processing and bakery plants.
