FIELD: brewery industry. SUBSTANCE: invention relates to brewery, production and fermentation of brewery wort and can be used for production of light and dark grade of beer mainly. Technology of their production involves the base fermentation and additional fermentation of wort. Method involves preparing mash, its saccharification, wort alcoholization, fermentation and additional fermentation. Enzyme preparations are added to alcoholized wort. Composition including alpha-amylase and glucoamylase obtained by biosynthesis using fungi of genus Aspergillus is used as enzyme preparations. In part, preparations Clarase B and Glucozym L-400 (producer is ENDE Industrial Corporation) are used as alpha- amylase and glucoamylase, respectively, taken in the amount 0.3-0.8 and 0.8-1.5 g/1 hectoliter of wort, respectively.
