FIELD: food industry. SUBSTANCE: invention relates to production of beverages from cereal raw. Kvass wort concentrate is prepared by saccharification of cereal products mixture as rye meal and rye malt in the presence of enzymes. Concentrate has a non- -fermented malt in combination with barley brewery malt as a source of rye malt. Prepared concentrate has 57-67 wt. -% of dry matters and acidity with equivalent value 7.0-25.0 cm3 of sodium hydroxide solution with concentration 1.0 mole/dm3 per 100 g of product. Composition for production of kvass wort concentrate has 20-25 wt.-% of dry no fermented rye malt, 13-15 wt.-% of dry brewery barley malt and rye meal, the balance. Proposed kvass wort concentrate is used for preparing light kvass for cold soup. EFFECT: improved method of production. 7 cl, 4 ex _
