FIELD: chemistry.
SUBSTANCE: mash is prepared, solution of enzyme preparations is added: Disticim BA, Disticim XL, Disticim Protacid Extra and Disticim GA in an amount of 200-250, 200-230 and 250-280 and 200-250 ml/t of grain raw material. Mash is saccharified, is divided on a press filter, filtered wort and flush water are diluted with water to dry substances content 6.0-6.5 %, heated to boiling point, boiled for 20-30 minutes. Wort is cooled to temperature of 30-35 °C, treated with activated carbon "Granukol BI" in an amount of 90-100 g/dal for 45-60 minutes, adding dry starter culture for starter preparation "Saf Leven LV1 (France) in amount of 100-200 mg/l of wort, pre-mixed with warm water at a ratio of 1:10. Wort is fermented to wort acidity 9.0-11 k.e., clarified, heat treated and cooled to 60-70 °C. Adding to cooled wort activated carbon "Granukol GE" in an amount of 90-100 g/dal, held for 45-60 minutes, coal particles are separated and base is concentrated to dry substances content of 10-15 %.
EFFECT: invention enhances organoleptic properties of finished product due to reduction of its chromaticity and absence of scents of extracts of used grain raw material.
