FIELD: food industry, manufacture of sausages. SUBSTANCE: the method could be applied at manufacturing membranes to further form scalded, scalded smoked, semismoked and crude smoked sausages. Colored mass is obtained by mixing disfibered collagenous material in aqueous solution containing a tanning agent and plasticizer, for example, glycerol for a time sufficient to obtain homogeneous mass. Suspension is prepared by mixing against introduction to collagenous material dry matter the mixture of pigment aqueous dispersions at 0.2-0.4% and hydrolyzate at 0.5-1.0%. Hydrolyzate-pigment suspension is obtained by adding the mixture of pigment aqueous dispersions into 0.9-2.5%-solution of protein hydrolyzate at pH being 3-4. The mixture of pigment aqueous dispersions is obtained by mixing red-, black- and yellow-colored pigment according to a formula dependence.
