FIELD: meat industry. SUBSTANCE: vacuum injector has sleeve with longitudinal cavity 2 defined by two mutually intersecting openings. Displacing device 3 formed of two engaging screws is located in cavity 2. Spindle 7 and branch pipe 8 for connection to vacuum system are located on opposite ends of sleeve. Charging hopper 9 is arranged between spindle 7 and branch pipe 8 and communicated with sleeve cavity through throat 10. Detachable insert 11 is mounted in throat 10. Channels for communicating portion of cavity between spindle 7 and throat 10 and portion of cavity between throat 10 and branch pipe 8 are defined by annular bore 12 and flat surfaces 13 on insert 11 and flat surfaces 14 on ridge 15 formed by overlapped sleeve cavity openings. Channels are embracing throat 10. Vacuum injector is used in sausage production for deaerating meat farce with further stuffing of sausage casings. Construction of injector simplifies removal of meat farce remains therefrom. EFFECT: simplified construction, increased efficiency and reduced labour consumption for injector cleaning procedure. 2 dwg
