FIELD: food industry. SUBSTANCE: invention relates to methods of liquid yeast preparing. The proposed method of preparing liquid yeast involves preparing flour brew, its saccharification and fermentation followed by yeast culturing with prepared nutrient mixture. The novelty involves the use of lens flour for brew preparing. The proposed method of preparing liquid yeast allows to exclude the main raw (rye flour) for nutrient mixture preparing in yeast biomass culturing that results to improvement of economical indices of plant due to increase of yield of ready articles prepared from economized baking flour. Invention ensures to intensify also process of liquid yeast preparing (biomass yield is increased by 30%), to improve biotechnological indices of liquid yeast quality (raising index is increased by 28%), to delay process of ready articles staling.
