FIELD: food and baking industry.
SUBSTANCE: method for producing liquid ferment for preparing bread from rye and mixture of rye and wheat meal involves diluting cycle including mixing meal, boiling liquid and water with addition of yeast and lactobacillus bacteria and fermenting the mixture. The industrial cycle involves addition to a mixture the nutrient medium consisting of rye meal, boiling liquid in water in mixture with yacon puree taken in the amount 10-15% of meal mass in ferment followed by fermentation of ferment. Invention provides improving quality and technological properties of liquid rye ferment, preparing composite of the ferment nutrient mixture creating conditions for intensification of symbiotic vital activity of yeast and lactobacillus bacteria, enhancing bread quality prepared of rye and mixture of rye and wheat meal, reducing consumption of rye meal.
EFFECT: improved producing method.
