FIELD: meat industry, in particular, canned food industry. SUBSTANCE: method involves cutting meat; deboning; trimming; cutting into pieces; salting and holding for maturation; placing prepared raw material in cans and introducing jelly media; rolling; sterilizing and cooling. Jelly media is prepared by mixing of cellulose food additive solution, chitosan solution, smoke preparation preliminarily cleaned by means of chitin or dry chitosan, and flavor additives. Components are used in the following ratio, wt%: solution of cellulose food additive 35.0-60.0; chitosan solution 35.0-60.0; smoke preparation 0.1-5.0; flavor additives the balance.
