FIELD: fish industry, in particular, beheading equipment for large fish, such as salmons and cods. SUBSTANCE: apparatus has lifting table top arranged inside bed and provided with matrix, head incorporating drive, cylindrical cutting unit, lifting mechanism and fish heads withdrawal tray located inside casing. Cylindrical cutting unit has hub with cylindrical cutter made in the form of hollow cylinder with toothed sharpened lower edge and attached to hub. Apparatus is further equipped with fish retainer fixed at its upper end to head casing in axially aligned relation with respect to cylindrical cutter and made in the form of vertical metal plate, whose lower end is formed wedge-shaped with different inclination angles. Tongue is attached to fish retainer at side of cylindrical cutter so as to define processing gap for insertion of sharpened toothed lower edge of cylindrical cutter. Table top located inside bed is equipped with telescopic guide and coupled to lifting mechanism. Adjustable fish retainer is positioned for adjustment around center of rotation of cylindrical cutter. Number of matrices is at least two. Matrices are made semi-circular and arranged along table edge and one with respect to another so as to define processing gap. Apparatus is actuated by means of fork-type pedal connected through leverage feedback to table top and secured to bed lower part. Such construction allows fish to be dressed into sheets in accordance with clipfish dressing procedure. EFFECT: increased efficiency and simplified construction. 5 cl, 3 dwg
