FIELD: biotechnology.
SUBSTANCE: invention is dealing with biocatalytic processes, which can be used in food, pharmaceutical, and other industries. Enzymatic hydrolysis of substrate involves its contact with biocatalyst prepared via adsorption immobilization of enzyme on support with cellular structure of a foamed material. Biocatalyst is fixed in rotating container accommodated in bioreactor. Rotational speed of container, both under periodical and continuous operation conditions, is 80 to 300 rpm. Under continuous operation conditions, substrate is fed into reactor at a velocity not exceeding 0.1 L/h.
EFFECT: increased hydrolysis rate due to intensified mass exchange between reaction medium and biocatalyst and increased substrate conversion degree due decreased diffusion limitations.
