FIELD: chemistry.
SUBSTANCE: biocatalyst for producing invert syrup contains silicon dioxide as a carrier and yeast biomass as a source of invertase from yeast, and has the following composition, in wt % of dry substances: yeast biomass - 40 to 80, silicon dioxide - 60 to 20. Method of preparing said biocatalyst involves mixing yeast biomass with a carrier - hydrogel of silicon dioxide, with subsequent drying at temperature not above 50°C, pressing and fractionation. The method of producing invert syrup is realised in a flow reactor with a biocatalyst bed with the following composition, in wt % of dry substances: yeast biomass - 40 to 80, silicon dioxide - 60 to 20, at temperature not above 50°C.
EFFECT: high invertase activity and stability of biocatalysts.
