FIELD: food-processing industry.
SUBSTANCE: method involves cleaning, cutting and drying mushrooms, with drying process being performed in two successively repeatedly alternating short-time stages, first stage involving processing cubic pieces of mushrooms in dense layer of overheated atmospheric pressure steam.
EFFECT: increased thermal effectiveness, intensified drying process and improved quality of ready product.
