SUBSTANCE: before freezing one should treat raw material with a preparation obtained out of Mortierella jenkinii micromycete biomass according to the preset technique to be kept for 2-5 h. The innovation provides decreased loss of water-retaining capacity and increased ultimate terms for refrigerating storage of raw material.
EFFECT: higher efficiency of cryoconservation.
