FIELD: food-processing industry, in particular, preparing of soft boilings.
SUBSTANCE: method involves mixing sweet substance, plasticizer and, as emulsifier and structurer, mixture of soluble edible salt of polybasic acid and preparation at ratio equivalent, with respect to valence, to acidic residue and number of free hydroxyl groups, respectively. Preparation is produced by sequential extracting of Pythium gracile micromycet biomass with the use of non-polar extractant in above-critical state, water, alkaline, water, acid, water, alkaline, and water, followed by joining of first extract with solid residue.
EFFECT: reduced consumption of process additives.
