SUBSTANCE: the present innovation deals with technology for obtaining soft caramel. Due to applying the mixture of soluble dietary salt of polybasic acid with a preparation obtained out of Pythium catenulatum micromycete biomass according to the preset technique it is possible to substitute a structure-forming agent and an emulsifier with it by decreasing their applied quantity.
