FIELD: biotechnology.
SUBSTANCE: method of preparing protein hydrolyzate comprises stripping and enzyme treatment of leather manufacture waste. Treatment is carried out in four stages: using pepsin, oxalic acid, neutral or alkali protease, and acetic acid.
EFFECT: enabled preparation of protein hydrolyzate with low content of mineral substances, high content of solids, and molecular mass comparable with that of collagen (300-360 thousands).
