FIELD: technology for pectin production.
SUBSTANCE: claimed method includes mixing pectin-containing raw material with water; hydrolysis-extraction with hydrochloric acid while dispersion in reaction mixture of gaseous hydrogen chloride; pectin-containing liquid phase separation and isolating of target product. Hydrogen chloride is introduced in liquid state, and dispersion of hydrogen chloride in raw material is carried out in pulsating mode. In process restarting of hydrogen chloride feeding is carried out, and when hydrogen chloride feeding is stopped, pressure in reaction mixture is dissipated up to value, which provides liquid phase boiling.
EFFECT: decreased energy consumption.
