FIELD: production of jellying concentrate containing plant- or microbial-type texturizers.
SUBSTANCE: method involves preparing sugar beet roots and providing thermal deodorization with carbon dioxide; squeezing for producing juice and pomace; performing hydrolysis-extracting of pomace; separating extract; blending juice and extract; introducing liquid ammonia into blend; providing vacuum evaporative concentration; processing concentrate with liquid carbon dioxide; heating to temperature of at least 60°C. Thermal deodorization process is performed with the use of carbon dioxide at above-critical state. Hydrolysis-extracting process is provided with the use of hydrochloric acid solution produced directly in extraction volume in the process of feeding therein of water and liquid hydrogen chloride. Simultaneously with ammonia, extract produced after extracting of Mortierella humilis micromycet biomass is introduced into blend in an amount of about 2% by weight of dry substances, said extraction procedure being provided with the use of carbon dioxide at above-critical state. After extracting with carbon dioxide in above-critical state, said biomass is sequentially extracted with water, alkaline, water, acid, water, alkaline and water. Resultant solid residue is treated with liquid ammonia and introduced into concentrate preliminarily treated with liquid carbon dioxide in an amount equivalent in consumption of biomass to amount of extract introduced simultaneously with liquid ammonia into blend.
EFFECT: increased yield of base product and improved texturizing properties.
