FIELD: food-processing industry.
SUBSTANCE: method involves grinding fruits in sugar solution and adding solid residue produced by sequential extraction of Pythium insidiosum micromycet biomass with the use of non-polar liquefied gas, water, acid, water, alkaline, and water by dispersing in mycelium mixture produced after first stage of extracting said biomass; separating product from inedible parts of fruits in aseptic conditions.
EFFECT: provision for obtaining of product with improved retention of initial color of raw material, increased breaking resistance during storage, and reduced consumption of power for production process.
