FIELD: food processing industry, in particular canner industry.
SUBSTANCE: claimed method includes fruit preparation, addition of sugar solution, cavity fruit crushing in sugar solution and puree separation under aseptic conditions. Cavity crushing is carried out by dispersing under atmospheric pressure in mixture of fruit with miscella sugar solution. Said miscella obtained from biomass of Mortierella spinosa micromycete by extraction with non-polar liquefied gas according to the claimed technology.
EFFECT: target product with improved quality.
