SUBSTANCE: method involves kneading dough; fermenting; cutting into doughs; forming; proofing and baking doughs; cooling steam mixture produced during baking and collecting of condensate; separating collected condensate by evaporation process into water and other components, including alcohol, with following utilization thereof according to designation.
EFFECT: provision for extraction and utilization of useful steam mixture products obtained during baking process, and improved ecology control.
