FIELD: food processing industry, in particular cannery industry, production of half-finished garnish potato.

SUBSTANCE: claimed method includes potato washing, inspection, treatment with preparation obtained from biomass of Mortierella sclerotiella micromycete according to claimed technology, peeling, post-peeling, heat treatment, pre-drying, pre-packing and freezing. Then potato is conditioned for approximately 5 hours.

EFFECT: garnish potato of improved organoleptic properties.
